For those who want maximum control over their knife's edge, whetstone sharpening offers a level of precision that guided sharpeners and honing steels cannot replicate. Choose a suitable side of the stone based on the knife’s condition and bluntness. The higher the grit number, the finer the finish.

Before use, soak the whetstone for 10 minutes, until it fully absorbs the water and bubbles stop coming from the stone.

Place the knife on the whetstone with the blade facing an 11 o’clock direction to maximise the sharpening of the entire blade.

Move the blade back and forth at a 15° angle about 20-30 times. Repeat on the other side.

After sharpening the blade, we recommend you rinse the cover, base whetstone and knife under a running tap without any detergents.

After cleaning and pat drying the covers and whetstone with the towel, place them in a ventilated area to dry.

Use the small flattening stone periodically to level our whetstone by rubbing it back and forth along its surface, adding some water.

FAQs

Yes. Soak the stone in water for 10-15 minutes before use, or until air bubbles stop rising. Keep it wet throughout sharpening.

Lower grits are for repairing damaged or very dull edges. Higher grits are for regular sharpening and fine honing. Progress from coarse to fine for best results.

15° is the standard angle for Katana Saya knives and most Japanese knives. Check the sharpening angle of other knife brands.

This varies by blade condition, but 10-15 passes per side on each grit is a good starting point before checking for burrs (small ridge of metal).

Rinse after use, let it air dry fully and store somewhere dry to prevent cracking or warping.

It has more of a learning curve than our roller sharpener, but with practise, it offers a level of precision, control and sharpness that other methods can't match.
