What is a paring knife?

A paring knife is a small knife with a short blade, made for work that needs control more than reach. It handles the jobs a chef knife is too large for, such as peeling, trimming and hulling, and is often used for those handheld jobs, rather than used on a board.

Katana Saya paring knives have a 9cm blade forged from 67 layers of VG-10 Damascus steel. The Japanese-style design is lightweight and nimble, with HRC60+ Rockwell hardness for lasting sharpness and a 15° cutting edge for clean, precise cuts.

What is a paring knife used for?

A paring knife covers the small, close jobs in food preparation, working with the ingredient in the hand or against a board. Typical tasks include:

  • Peeling: takes the skin from apples, pears and potatoes with little waste, and suits slicing fruit once peeled.
  • Hulling and coring: lifts out strawberry hulls and tomato cores with the point of the blade.
  • Trimming: tops and tails green beans, trims mushroom stems and tidies herbs.
  • Deveining: removes the dark vein from prawns.
  • Segmenting citrus: cuts oranges and grapefruit into clean segments, free of pith.
  • Scoring and garnishing: marks tomatoes before blanching and cuts small decorative garnishes.
  • Fine chopping: minces garlic and shallots in small quantities.

Squash, melon and other large or very hard produce call for a vegetable knife or chef knife instead.

Paring Knives vs Chef Knives vs Utility Knives

A paring knife, a utility knife and a chef knife cover different scales of work, so they complement each other rather than compete.

A paring knife suits small ingredients and close control: peeling, hulling, trimming and other detail work. A utility knife has a slightly longer blade and sits between the two sizes. This suits medium prep on the board such as slicing small fruit, when a chef knife feels too large but a paring knife is too short. A chef knife takes over when the job involves volume, large vegetables or bigger cuts.

How to Choose a Paring Knife

Four details set our paring knife apart from others: blade length, steel, handle and sheath.

  • Blade length: every Katana Saya paring knife features a 9cm blade which suits both in-hand work and short cuts on a board.
  • Steel: 67-layer VG-10 Damascus brings edge retention, toughness and corrosion resistance. Smoke blades are black Damascus, and Flame blades are folded with copper and brass for a rainbow pattern.
  • Handle: for a wooden paring knife, Olive Wood and Pakkawood handles carry an opal-effect ring, Smoke has an octagonal ebony handle, and Flame comes in octagonal rosewood or olive wood. Pearl uses abalone pearl resin instead.
  • Sheath: every knife includes a protective sheath, leather or wooden depending on the range, and a wooden gift box.

Damascus Paring Knives as Gifts

Every Katana Saya paring knife arrives in a wooden gift box with a protective sheath, so it’s beautifully presented, ready to be gifted. A paring knife also suits cooks who already own a chef knife: a smaller tool for everyday prep, available in a handle finish to suit their kitchen. To build a larger gift, browse knife gift sets or a starter knife set.

Paring Knife FAQs

Yes, for small jobs. A paring knife trims fat and silverskin from small cuts and scores meat before cooking. The blade is too short and light for slicing roasts or breaking down joints, which suit a chef knife.

Pinch the base of the blade between thumb and forefinger and wrap the other fingers around the handle. On a board, curl the fingertips of your guiding hand away from the edge. For in-hand work, keep your fingers clear of the blade's path.

No. A dishwasher can dull the blade and cause spotting on Damascus steel. Wash by hand in warm water with mild soap straight after use and dry thoroughly.

Use a honing rod before each use to keep the edge aligned, and sharpen periodically with a whetstone or roller sharpener. Avoid cutting on glass, stone or ceramic, which can chip or dull the edge.

Get the most out of your knives

Damascus steel is prized for its strength and beauty, but a little care goes a long way in preserving its edge and finish. Follow these simple guidelines to keep your Katana Saya knife performing - and looking- its best for years to come.

Damascus Blade

Handwash immediately after use with warm water and mild soap. Dry thoroughly with a soft cloth before storing. Never soak, leave wet or put in the dishwasher as this can dull the blade and cause spotting.

Cutting Edge

Use a honing rod before use to maintain alignment and sharpen periodically with a whetstone of roller sharpener. Avoid cutting on glass, stone or ceramic surfaces, which can chip or dull the edge.

Premium Handle

Wipe clean with a damp cloth and dry immediately. If your handle is wood, apply food safe mineral oil occasionally and avoid prolonged water exposure.

Safe Storage

Ensure the blade is completely dry before putting away to prevent moisture build up. Store in a safe place our of reach of children using safe storage solutions e.g. knife block, knife case or knife sheath
